About this product
We introduced the House Selection label over 10 years ago. The idea being that we seek out caviar of exceptional price/quality whatever it may be.
We are very fortunate to be able to source our current House selection from the oldest outdoor farm in France. It is from pure Siberian (Baerii) sturgeon and it is really very good indeed.
The eggs are similar in size to Oscietra, but are rather darker in colour, some verging towards black. The caviar has a tremendous front-of-mouth flavour so is ideally suited to canapes but is also well suited to being enjoyed at leisure. Best of all, at this price, you can have lots of it!

What is Borax?
Borax, also known as Sodium borate, is a form of salt that is traditionally used in caviar production. It helps in the preservation process, improves consistency and also enhances the flavour.
