Enjoy excellence all year round. First-boil extra brushed black truffles are black truffles harvested at perfect maturity, with a very even shape.
They are called “first boil” because they are very carefully appertised just once and their precious aromas therefore remain virtually intact.
This process, introduced in response to high demand from our Chef customers, involves sorting the fresh black truffles and placing them in jars, which then go into an autoclave to be sterilised at high temperature. The sterilised truffles can then be stored for several months.
All the aromas of the precious black diamond are retained and will be unleashed into your dishes to bring you a unique culinary experience.
EXTRA quality whole black Winter truffles (the best available) harvested when maturity is perfect. Preserved in a jar it comes with it’s own truffle juice
This whole extra truffle is harvested at peak maturity, then bottled and sterilised. This process, known as appertisation, means the finest truffles can be stored while retaining all their precious flavours.
Preserved whole extra truffles, with their appealing regular shape, can be kept for several years unopened and enjoyed in any season. With their pleasant shape, they are perfect for use in sophisticated dishes which will be enhanced by the truffle’s unique flavour. The whole black truffle should be very gradually heated to unleash all its flavour into your dish.
Best added to your dish just prior to serving and do not apply too much heat as this destroys their delicate flavour
The black truffle will be the perfect addition to your fish, meat, game or poultry and of course eggs!

To enjoy all the flavours of preserved black truffle, allow for 10-15 grams per person. In a recipe, keep to a truffle content of 10% of the total ingredients.
The truffles have already been cooked, so add them, along with their juice, to your dishes and sauces at the last minute. They should not be eaten raw. Heat them gently to make the most of their wonderful flavour. The whole black truffle will go well in a risotto, pâté or with poultry.
