The duck Foie Gras is macerated for many hours in a marinade made from Alsace Pinot Noir, a reduction of orange juice and seasoned with spices such as cinnamon, cardamom, pepper, star anise… This is followed by a gentle cooking process that preserves all the spicy flavors of this blend. Finally, the Foie is impregnated with a beautiful dark red marbling, which is why the slices are beautifully presented on the plate!
Mi cuit foie gras have been cooked less than fully preserved foie gras and have a slightly fuller flavour that connoisseurs generally prefer.
This outstanding foie gras makes for a very special starter for four on special occasions and is also popular to send as fine food gifts.
If you want to enjoy foie gras at it’s very best, we recommend enjoying it cool (remove from fridge 10 minutes prior to serving) on some finely sliced good quality white bread (toasted or untoasted), a few salt crystals/ fresh or dried figs or a chutney/ wine jelly of your choice.
