This recipe is unique to Conserverie Courtin (based in Concarneau in Brittany) and prepared with fresh scallops gently cooked in Brittany butter seasoned with bread crumbs and shallots … the result is something delicious with a very delicate flavour – even when you open the tin the smell of scallop hits you and the flavour and texture are superb.
At its’ best we feel enjoyed tepid (or just at room temperature) on some toast, accompanied by a side salad and a very chilled medium dry white wine. You can also add one tin to pasta sauce and you get a very delicate flavour.
Another way to enjoy it is fill 2 small scallop shells (if you have these) with the confit de St Jacques, add some bread crumbs, and warm gently in an oven and serve warm.
Serves two as a luxury French starter as even though the tins are small, it’s surprisingly nourishing- presented in easy to open tin.

Storage:
Store in a cupboard. Once open store in a fridge 0-4c, and consume within 2 days.
