This caviar comes from Siberian sturgeon (Baerii). We have managed to secure a supply from one of the oldest and very best regarded outdoor farms in the Aquitaine region of France. Not only that, but we have managed to secure a supply of their very best caviar. The farm is widely regarded as the best producer of Baerii caviar in Europe and this is the very best of what it produces. The good sized eggs are dark in colour and are firm on the palate but a little softer than our Oscietra. The Sibirskye gives a wonderful, complex burst of flavour on the front of the palate but lingers much longer than an ordinary Baerii.

The Siberian (Baerii) sturgeon is a mainstay of the caviar farming industry. It is used by many farms due to its excellent taste, appearance and relatively short time to harvest. The eggs are a similar size to Oscietra, and tend to be dark brown, verging towards black.

Caviar Storage:

Please note that all caviar products should be refrigerated upon receipt. Once opened, consume within 48 hours. Caviar can be stored in a domestic fridge from -2c to +4c (the colder and closer to 0c the better!) 4 weeks and more. When storing caviar in your fridge, it is important to store it at the back of the fridge on the bottom shelf where it is coolest and temperature does not fluctuate.
