One-Pot Butter Bean Cassoulet
Cassoulet might just be the perfect winter dish. Warm, hearty and rich – it’s the culinary equivalent of sticking a fire on and hunkering under a blanket for warmth.
This Butter Bean Cassoulet is packed with fresh ingredients and is perfect for those who want the flavours and heartiness of the dish but don’t fancy the original sausage-filled version. The combination of vibrant plum tomatoes and butter beans simmered in a herb-infused sauce means that it still packs all of the flavours of the classic French dish without the meat and with fewer calories. A win-win for everyone.

Ingredients
125g Baby Plum Tomatoes
30g Tomato Puree
1x 400g Butter Beans
150g Green Beans
2 Garlic Cloves
40g Mixed Herbs
20g Butter
1 tsp Sugar
20g Grated Hard Italian-style cheese
1 x 20g Red Wine Stock Cube
2 Ciabatta Rolls
Olive Oil for cooking
Method
Prep
- Drain and Rinse the Butter Beans in a sieve
- Trim the ends of the Green Beans and cut them in half
- Peel and grate the Garlic using a garlic press
Cooking
- Drizzle Olive Oil into a large saucepan and heat on medium
- Once hot, add the tomato puree and garlic and cook for 1 minute
- Add in the wine stock cube, sugar, mixed herbs and 250ml of water
- Stir to combine
- Bring the sauce to a boil, then add in the Butter Beans, Green Beans and Cherry Tomatoes
- Once combined, lower the heat to a simmer for 15-20 minutes until the liquid has reduced slightly and the tomatoes have softened
- Slice the ciabatta rolls in half, ready to toast
Final Touches
- When the cassoulet has 5 minutes remaining, toast the rolls until golden
- Drizzle with olive oil and then cut into 8 triangles, then sprinkle salt on top
- Take off the heat and stir the butter into the cassoulet until melted. If it is too thick, add a dash of water as well
- Separate into serving bowls and drizzle the pesto over it before sprinkling the grated cheese and serving the ciabatta alongside
