Although derived from exactly the same species of sturgeon, these two delicious caviars are very different. Which do you prefer? We are keen to know as we cant make up our minds. They are both exceptionally good. So order them both together and have fun seeing which takes the Gold Medal – or is it a draw?

Oscietra

Our Oscietra is sourced from a cold water, out door farm in northern Italy. The large egg size and colour make it very impressive to the eye. The firm eggs are about 2.8mm diameter with a colour varying from a rich golden brown to dark tobacco brown. This Oscietra has a mellow nutty flavour, that lingers long on the palate and longer in the mind, just as a really good caviar should. You can wake up in the middle of the night dreaming about this Oscietra!

Oscietra Caviar is one of the famous Caspian caviars and comes from the Oscietra (aka Russian) Sturgeon, which has the Latin name of Gueldenstaedtii. It is farmed in various European countries as well as else where in the world. However, it is amazing how the flavours vary from country to country and farm to farm, although it is the same type of sturgeon.

Just occasionally, we come across a caviar that we have to offer. We are very very happy with our existing Oscietras, but we just could not resist listing this caviar that comes from an outdoor flow-through farm in Poland.

This caviar has been 12 years in the making and it is harvested from Gueldenstaddi sturgeon, with the stock originating from the Caspian Sea. They are very proud of their sturgeon stock, and rightly so as it produces a caviar that is exceptional on the eye and on the palate. The eggs are firm and well defined. They are lighter in colour than most Oscietra, but the tobacco colours fading to a more golden background. It is delicious.

What is Borax?
Borax, also known as Sodium borate, is a form of salt that is traditionally used in caviar production. It helps in the preservation process, improves consistency and also enhances the flavour.

Storage:

Please note that all caviar products should be refrigerated upon receipt. Once opened, consume within 48 hours. Caviar can be stored in a domestic fridge from -2c to +4c (the colder and closer to 0c the better!) 4 weeks and more. When storing caviar in your fridge, it is important to store it at the back of the fridge on the bottom shelf where it is coolest and temperature does not fluctuate.

Cooking Preparation Tips

How best to enjoy your Royal oscietra caviar?

1. Eat a little on a spoon to enjoy the taste in it’s purest form!

2. Add a little to a blini, with butter or sour cream and chives – makes a great canape.

3. Can be enjoyed on toasted dark rye bread with scrambled eggs.

4. Traditionally drinks to accompany caviar include chilled vodka or champagne.
