Very tender pieces of pork loin which are confit (cooked slowly) in duck fat.
The end result is a dish with wonderful flavour and texture – delicious with oven roasted potatoes.
The dish is very well seasoned (just salt and pepper), the actual duck fat used has superb flavour and a liberal amount of stock in in the jar, which imparts superb flavour to this dish!
To prepare, pour contents into an oven dish, remove any excess duck fat (you can keep this in a jar to roast potatoes and vegetables), and place in a preheated oven at 180g for 25 minutes. Serve with oven roasted potatoes.
Serves 2 large appetites/ 3 middling appetites.
